Rannoch Recipes
The chefs at the award-winning Rannoch Smokery based in Kenmore, Perthshire, have created a wide range of recipes using their smoked venison, poultry, game and salmon products  The recipes have been tried and tested and the company has kindly agreed to allow some of them to be included in the Rampant Scotland recipe section  They also supplied some mouth watering illustrations of the finished dishes.  Recipes include Smoked Venison, Rocket and Cream Cheese Roulade and Venison and Peppered Pear Salad.  The Rannoch Smokery products can be sent anywhere in the UK but similar products are probably available in other parts of the world too.   The recipes (earmarked with a "new" graphic) are included on the recipe index page.

Scotland - The Food and Cooking of ScotlandThe famous Scottish saying "'S mairg a ni tarcuis air biadh,' ('He who has contempt for food is a fool.') describes precisely the attitude to the food and cooking of Scotland.  From the national dish of Haggis (sheep's intestine cooked in a sheep's stomach), to the finest whisky in the world, and what would breakfast be without the ubiquitous porridge.  The Scots have learnt over the years to make best use of the offerings nature handed to them in Scotland, from the rugged mountains, lakes, sea lochs and streams, to the fertile valleys and moorlands. The climate of Scotland is relatively temperate in the southern and central parts but the highlands and islands are subject to particularly harsh winters.  The site has information about history and the Scottish kitchen today
